Stock Season Ing:

Stock Season Ing Divide the meat into neat pieces, arrange in a casserole with the whole or sliced onions, whole or sliced carrots, stock season ing and seasoning. Cover tightly and cook in a cool to very moderate oven for about l hours. Add the quartered tomatoes, peas and the herb dumplings (check to see there is plenty of stock season ing in the casserole). Do not cover again, but cook for a further 30 minutes. If preferred, this may be cooked in a saucepan, but in this case, use li-li pints stock season ing. This is excellent with new season's lamb.

Heat butter and fry chopped onions and leeks until golden but not brown. Add stock season ing, or water with chicken stock season ing cubes, chopped potatoes and parsley. Simmer for 30 minutes, rub through a sieve and return to pan. Blend eggs with cream, add to soup and cook WITHOUT BOILING for a few minutes. Season. Serve topped with chives or parsley.


Put the lentils (these can be soaked overnight if wished), bacon, onion, carrot and stock season ing into a saucepan and add seasoning and herbs—the season ing MUST be added at the very start of cooking.
